- Vino tinto
- Queso cheddar
- Aceite de girasol (u oliva)
- Ingredientes para el arroz de guarnición
- 70 g arroz bomba / persona
- Ajo
- Sal
- Pimienta negra
- AOVE (Aceite de Oliva Virgen Extra)
- Tomillo

- La noche anterior dejamos en remojo unos 130g de judías pintas y al día siguiente las cocemos en agua con sal. Reservamos. (TAMBIÉN PODEMOS USAR JUDÍAS DE BOTE)
- Mise en place
- Picamos la cebolla, el pimiento, el ajo y el perejil. Rallamos el queso, trituramos el tomate y desmigamos el chorizo quitándole la malla exterior.
- En una olla echamos el chorizo desmigado y lo ponemos a fuego medio-alto para que vaya soltando la grasa. Cuando esto ocurra añadiremos las hortalizas picadas y el perejil.
- Pochamos las hortalizas y agregamos la carne picada. Deberemos ir rompiéndola para separarla. Cuando coja color regamos con vino tinto y dejamos evaporar. Salpimentamos
- Añadimos el tomate triturado, echándole el azúcar para corregir la acidez. Agregamos el comino.
- Cuando el tomate haya reducido echamos el fondo oscuro y volvemos a dejar reducir. Cuando esté casi listo agregamos el pike al gusto (cayena molida o similar). Es un plato mexicano por lo que lo propio es que pique considerablemente. Los últimos 5 minutos de cocción echamos las judías cocidas.
- Preparamos un arroz fileteando los ajos, salteandolos con un poquito de aceite, sellamos el arroz y cocemos con agua, sal y pimienta, cuando esté listo sazonamos con tomillo.
- Cogemos 2 o 3 tortillas de trigo y las cortamos en tiras, las freímos en aceite y dejamos escurrir en un plato con papel absorbente.
- PRESENTACIÓN:
Se puede servir en un plato poniendo el arroz, encima el chili, sobre este la tortilla frita y coronando el queso cheddar rallado.
Otra opción es poner cada cosa en un cuenco y en un plato unas cuantas tortillas de trigo y así cada uno se monta su "burrito" como le apetezca 😁
